How are you doing? One of the silver linings of this quarantine is that we are all cooking more homemade meals. For some of us, this is an opportunity to hone our skills, get creative and try new things. For others, the task of preparing three meals a day for yourself, a partner and kids can be exhausting and overwhelming.

In this newsletter we wanted to share somesimple, easy-to-prepare, nutritious recipes to nourish you and your family. These meals have been tried and tested in our own homes and many contain very few ingredients and require minimal effort. We focused on foods with brightly colored vegetables that provide higher amounts of nutrients, minerals and antioxidants which our bodies desperately need during times of increased stress.
